HYDROPHOBIC INTERACTIONS
Hydrophobic forces are the forces of a specific repulsion between non-polar atomic groups and molecules of water. They belong to the group of weak interactions. The spatial structure of water tends to extrude hydrophobic groups, which disturb the net of water molecules connected by hydrogen bonds. This kind of extrusion out of a water solution is called hydrophobic interaction. It is known that biopolymers function in water surrounding, and it is presence of hydrophobic bonds which determines to a considerable extent the form of a macromolecule.
