SEQUENTIAL MODEL OF FERMENT STRENGTH REGULATION
Symmetrical model is one of the two models, which explain the cooperative mechanism of ferment strength regulation. It is assumed in the sequential model that single subunits of a multimer molecule can have different tertiary structures in the same time. At that bonding of substrate by one subunit can cause change of the tertiary structure of a neighbouring subunit (or, neighbouring subunits) and, as the result, their affinity to the substrate will either increase (positive cooperativity) or decrease (negative cooperativity).
